Huber’s Corn Pudding
Summer’s bounty includes fresh sweet corn. We are proud to offer our
corn pudding recipe from Plantation Hall (our banquet facility) as a delicious
alternative to traditional corn on the cob. Our corn pudding is fast becoming
the most requested vegetable dish served at Plantation Hall.
Ingredients?:
4 cups cooked Huber Sweet Corn
1 cup white cream sauce (recipe below)
1 cup sour cream
1 8 ½ box corn muffin mix
¼ cup butter (1 stick)
White Cream Sauce:
2 Tbsp butter or margarine
2 Tbsp all purpose flour
½ Tsp salt
? Tsp pepper
? Tsp paprika
1 cup milk or half and half
Instructions:
Melt butter, combine all ingredients; mix well with a large spoon. Place
mixture in a 9×13 inch pan. Bake at 350° F for approximately 30 – 40
minutes, until golden brown.
White Cream Sauce:
In a heavy, 1 quart saucepan, over low heat, melt margarine or butter. Add
flour, salt, pepper, and paprika to melted butter or margarine. Over low heat,
stir together until smooth. Gradually stir in milk; stirring constantly, until
thickened and smooth.
